Wild-harvested Papaloma with Azul (Tequiliana Weber) distilled with a Raw Chicken breast, and a traditional mole between the boiling chambers of his handmade copper stills.    Emmanuel Ramirez Espadin from San José Rio Minas, Oaxaca.: A 95-liter batch of Cultivated agave was fermented in an underground oven using tepehuaje firewood and palm leaves. Dry fermented for two days with added spring water. Distilled in a hybrid still made of steel and clay.   “Tio” Pedro Tobalá from “La Esperanza” Santa Catarina Minas, Oaxaca: A 55-liter batch from wild Tobalá roasted in an underground oven with guamuche firewood, fermented in pine tanks, distilled in clay pot stills. Happy St. Bernardus Day! Each year on the 20th August, beer drinkers from all over the world celebrate St Bernardus Day. The brewery has been brewing Belgian beers under the St Bernardus brand since 1992, however the beer recipes have been in existence a lot longer and originated from Monks. The brewery brews a range of Abbey beers, including a wheat beer, dark beers and a blond triple. All of the beers are top-fermented and only two types of malt are used – a pale malt and a dark roasted malt.
